If you are at all like me and love the coffee flavor, then you will adore these cookies. They are quick and easy and the perfect cookie texture. Nice and soft in the middle, while the edges have the desired cookie crisp crunch to them.
The recipe is adapted from Table for Two: Cafe Mocha Cookies.Â

I’m a sucker for a freshly baked cookie, this lead me to combine my love for coffee into a delicious chocolate chip cookie!
Probably the best part to this cookie recipe is grinding the fresh coffee bean to add to the dough, the smell of the coffee alone is intoxicating.
The second best part to this cookie is the shaved DARK CHOCOLATE! Now you could go the easy route and add mini chocolate chips, but dark chocolate is worth the extra effort. Dark chocolate has always been a staple in my mom’s house. I grew up with a house full of dark chocolate fans; my mom as our leader. It’s a bitter sweet flavor that takes some getting use to, but is SO delicious when dipped with fresh fruit or added to baked goods. It highlights the intense chocolaty rich flavor. It didn’t feel right to making these cookies without integrating the best ingredients. Dark chocolate is healthy for you too! (Thanks mom)
If the flavor of dark chocolate doesn’t quite have you sold then let me break down how phenomenal I found it to be.
Just image the perfect bite of cookie; soft warm cookies overflowing with dark chocolate shaving in ever bite. The dark chocolate accenting the ground coffee flavor to be the perfect balance of sweet to coffee. Thatâs these cookies!
One thing I  did notice, the cookie dough texture compared to other cookie dough was dry and crumbly. Donât let this discourage you like initially it did for me. Just compact the dough into a ball when placing on the cookie sheet and you will be fine. I promise.
Cafe Mocha Cookies with shaved Dark Chocolate
Makes about 30 tablespoon sized cookies.
Ingredients:
- 1 1/2 sticks unsalted butter, softened
- 3/4 cup dark brown sugar, packed
- 1/4 cup granulated sugar
- 1 eggs
- 2 tsp. vanilla extract
- 1 cups all-purpose flour
- 1 cups bread flour, this makes the cookie soft and chewy.
- 2 tsp. baking soda
- 1 tsp. salt
- 2 heaping tbsp. coffee grounds
- 1/2 to 1 cup shaved dark chocolate depending on how chocolaty you would like the cookie.
Instructions:
- Preheat oven to 350 degrees. Spray baking sheets with nonstick spray.
- In a large bowl, add flours,, baking soda, salt, and coffee grounds. Whisk to combine. Set aside.
- In a larger bowl, cream together butter and sugars for until light and fluffy. Then add in the egg and vanilla extract and beat for 2 more minutes.
- Slowly add in the flour mixture and mix until all combined and well-incorporated.
- Using a spatula, fold in the dark chocolate shavings.
- Bake for 10-12 minutes. They will look super soft and pale but they continue cooking after you remove them from the oven.
- Let cool on baking sheet for 5 minutes before you move them to a wire rack to cool.
- Bon appetit!
Try not to eat the whole sheet of cookies in one sitting đ
